“Zoned Out” Bacon Berry Protein Muffins

Make These Muffins!!!I get requests all of the time for eggless, on-the-go breakfast options, so I built this recipe and I love these things. You can easily trade one egg for 3 more slices of bacon and keep them in The Zone.

If I could give all of you firebreathing CrossFitters one bit of advice, it would be to make these this weekend and use them to fuel your fitness all week long. I make them two dozen at a time and can fit 10 into a 1 gallon zip loc bag. I zip the bag until it is almost closed leaving a one-inch opening in the center of the zip. I pinch on each side of the opening and push the pinches toward each other. Then, I suck the air out as hard as I can (i.e. Suck So Hard) and quickly zip it shut. This is the poor man’s vaccum sealer. I freeze two bags of 10 and keep the remaining four in the fridge. While these are designed for breakfast, they make a great, Zone balanced snack any time of day. I can’t make The Zone any easier than this. There is no reason that you shouldn’t have these on hand at all times.

I can just hear it now, “I didn’t have any Bacon Berry Muffins prepped out, so I had to go to Chick-Fil-A for some waffle fries and a shake.” No excuses, guys…
