Sausage and Power Greens Cameraman Special

This is a fun new series that pits me against the clock and whatever ingredients Jesse selects from the Garage Fridge. This is probably not something that I would plan to make, but displays the “ready for anything” quality of a Culinary Ninja. The video calls them super greens, and this article calls them power greens, just know that these greens are “Super Powerful”.

Jesse selected a hotel pan of ingredients from the fridge, I set the stopwatch for 12 minutes, and I uncovered the ingredients and got to work. Check out this “mystery basket-style” preparation here…

It’s Wednesday, so I have to keep it short today because I have 20 Culinary Ninjas coming to The Paleo Garage in less than 3 hours. Tonight is the final night of the inaugural session of cooking classes and I can’t wait to get these guys off my back! I mean, I will be sad to see them all go, but know that they’ll be back for future classes and we’ll all be friends forever.

Sausage and Power Greens

Ingredient List:

  • 1 1/2 sweet potatoes, roasted until tender (5 C)
  • 1 large onion, julienned (2C)
  • 2 limes (juice of one, segments of the other)
  • 2 links Italian sausage, removed from casing (approximately 1 pound) (8C)
  • 2 handfuls Power Greens (mix of kale, spinach, arugula, etc…)
  • 3 Roma tomatoes, fleshed and julienned (1C)
  • Olive oil, as needed (8F)

Preparation Instructions:

  1. Heat a 14” sauté pan over high heat, add olive oil and sausage broken into chunks. Cook for 3 minutes.
  2. Add onion and cook for 2 minutes.
  3. Add sweet potatoes and cover pan with foil, a lid or a sheet pan. Cook for 2 minutes.
  4. Add tomatoes, toss and continue to cook.
  5. Add greens and lime juice, toss, cover, and cook for 2-3 minutes.
  6. Cut the heat, give the mixture one last toss, then plate and top with lime segments.
  7. Share with your friends and feel the super powerful effects of this awesome “Cameraman Special”!
