Reina Pepiada




People love chicken salad. People love guacamole. Put them together and you’ve got a winner, winner, chicken dinner!

Today, I’ve done just that.

My cousin married a Venezuelan, so this dish is practically in my blood! Not really, but it would be cool if I were at least part Castilian. You know, somewhere where tortillas, pupusas, tacos, empanadas, huaraches, arepas, etc… were native. Instead, I’m Norwegian, so we’ve got Lefse and Lutefisk. Regardless of your heritage or mine, I’m sure that you’ll enjoy today’s recipe.

I saw it prepared a couple years back on Diners, Drive-ins and Dives and I’ve been meaning to make this video ever since. Reina Pepiada is perfect for meal prep, a party, or a potluck. I have never seen anyone else make it, so if you do, I’m sure your dish will be a hit!

While I use bell pepper chips, you can easily swap them for celery and carrots or any other veggie you see fit. I’m sure that this chicken salad will become your favorite, so make it soon as you continue your journey into Culinary Ninjahood!

I am currently sitting in the lobby at the Hampton Inn in Carson, California as we prepare our food booth for The CrossFit Games, which start today. We’ll start serving food on Thursday, but the Masters and Teens start competing today. One of the other food booths had to drop out, so we took some of the extra space and are going to sell tacos under the name “Tahoe Taco”. I’ve been playing with the idea for awhile and would like to have a taqueria in and around Lake Tahoe. I’ve been at The CrossFit Games for 6 years and have never had a taco. With The Games being moved next year, I figured this was my chance.

Reina Pepiada


  • 1 avocado
  • 2 cloves garlic, mashed & pureed
  • 3 scallions, sliced
  • 1/2 jalapeno, small dice
  • 1/2 red onion, small dice
  • 1/4 bunch parsley, chopped
  • 1/4 bunch cilantro, chiffonade
  • 2 tablespoons white vinegar
  • 2 pound chicken breast, roasted to 165F, cooled & shredded
  • Kosher salt, to taste
  • 4 multi-color bell peppers, cut into ‘chips’

Preparation Instructions:

  1. Mix all vegetables and herbs together in a large mixing bowl until it resembles guacamole.
  2. Stir white vinegar into mixture until fully incorporated.
  3. Work the chicken into the mix with your hands until evenly dispersed.
  4. Serve with bell pepper ‘chips’.
  5. Enjoy!
