Pineapple Cucumber Mint Toss-Up

I love this one because it’s simple, it’s cheap and it’s super tasty!

While it is effective to marinate the pineapple and cucumber in the vinegar, you only want to fold the mint in at the last minute. The mint will turn brown overnight, so be sure to keep that in mind if you are making this ahead of time.

This is not your traditional side dish, but is a great option if you’d like to “Toss Up” your regular routine. You can also swap the pineapple for melon, watermelon, etc… Be creative!

Pineapple Cucumber Mint Tossup

Ingredients:

  • 1 pineapple, peeled, cored, and diced
  • 2 cucumbers, peeled, fleshed, and diced
  • ¾ cup white vinegar
  • ½ a red onion, sliced paper-thin with mandolin
  • 4-6 leaves of fresh mint, hand shredded
  • Salt to taste

Preparation Instructions:

  1. Toss ingredients in large mixing bowl, let marinade or serve fresh!
  2. Salt as close to serving as possible, serve in individual cups or family-style in a large bowl.
  3. Enjoy!
