The Paleo Test Kitchen – Where Culinary Ninjas Unite

I was recently asked to sum up in one paragraph what I am doing with The Paleo Test Kitchen. I didn’t think much about it at first, but when I went to write the paragraph, I found it difficult to summarize my misison in a few sentences.
I used to look to my Paleo Poem to purvey my passion, but I think it’s time to hit the refresh button and lay out my current thoughts on what this site is dedicated to.
I love the above picture because, although you cannot see it, The Bro! has the happiest look on his face that you could possibly imagine. His smile is huge for me and represents the happiness that I hope to bring others through my work.
Let me start with the last two stanzas of my Paleo Poem:
“To debunk the myths you’ve been fed about nutrition and show you the truth about food is my mission. 

So come with me and the goods you will witness, let Paleo Nick be your guide to Culinary Fitness!”

Combine this with three facts about me:

  1. I love people.
  2. I love to workout.
  3. I love to eat.
Add to that a little sarcasm, some good humor, an occasional “Fargo” accent (I lived ther for the first 12 years of my life) and the fact that I worked in a professional kitchen from age 14-26 and you’ll have the starting point for who I am and what I’m about.
I’m a father, a husband, a son and a brother and I love to eat.
I enjoy teaching and I like learning from others. I like to lend a helping hand, a smile and an encouraging word, and I love to eat.
The thing I love about food is that it brings people together and everyone does it. If I could teach you how to drink water, I would, but drinking water is pretty straightforward. Eating, on the other hand, is not. There is a ton of information out there regarding eating properly, dieting, nutrition, etc… While I don’t have all the answers, I feel I have a pretty good grasp on what is good for human consumption, and, furthermore, how to prepare such foods.
So, I started this site to share what I know, not about drinking water, but about what to eat and how to cook it. I am a firm believer that our moods, attitudes, productivity, and energy levels are tightly tied to the foods we consume. I also believe that we are happiest when we cook for ourselves and that, if it is our goal to eat healthy, then we need to know how to do just that.
This month I celebrate two years of work on the site. It also marks the start of the next chapter in this project; The Paleo Test Kitchen.
So, what is the Paleo Test Kitchen?
It is a place of Paleo pedagogy that combines culinary techniques with sound nutritional principles to bring you a cooking experience like no other. It is my goal to make learning to cook fun. I want your kitchen to be a place of solace where you can relax, experiment with confidence, and turn out tasty food time and time again. Think of The Paleo Test Kitchen as the “Cheers Bar” of the culinary world. We’re gonna laugh, we’re gonna cry (when we cut onions), and we’re going to get our hands dirty.
I’ve put a lot of hard work into designing this place and will continue to do so. That being said, I invite any of you, at any time, to join me a for a meal, a video, a cooking lesson, a prep session, or just to hang out.
Life is about progress and I am here to help you progress. The Paleo Test Kitchen is a tool that I will use to help you improve your life in every way I can. So, while my mission is difficult to summarize in a few sentences, please understand that at the root of it, I am here to help you get better at life. When you get better at life, you become happy and happiness is what I hope to bring others through my work.
And, maybe one day, you’ll be as happy as The Bro! and you’ll smile like this, in The Paleo Test Kitchen…
It’s a fun place, you guys. I promise you that.
