Chocolate Chunk Cookies




There are few questions in life that beg not an answer, one of them is, “Do you want a cookie?”

When one adopts healthy eating habits, this question can put them on the defensive. Fret not, my friends. My Chocolate Chunk Cookies bridge the gap between cookie monsters and cookie haters.

Another good question is, “Do palatable, Paleo cookies exist?” The answer will always depend on your definition of Paleo, but it seems difficult to find a cookie that is “strict Paleo” and tastes good. That is why I suggest my “pretty Paleo” approach as described in my article, That’s Not Paleo!.

In these cookies, I use Enjoy Life brand chocolate chunks. I don’t know that they are any better for you than Toll House brand, but they are wicked expensive and they use evaporated cane juice (another word for sugar) as a sweetener, so the I feel good when I use them. They also help me do what they suggest I do, which is Enjoy Life. 😉

I am a bit of a hack as a baker, but I can hold my own. My wife makes the much prettier than I, but she is camera shy, so you’re stuck with me!

Chocolate Chunk Cookies

Ingredient List:

  • 3 cups almond flour
  • ½ cup coconut oil
  • ½ cup honey
  • 2 large eggs
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 ½ cups chocolate chunks (I use Enjoy Life Brand)

Preparation Instructions:

  1. Combine all dry ingredients in a mixing bowl except for chocolate chunks.
  2. Add wet ingredients and mix well.
  3. Stir in chocolate chunks until distributed uniformly. 
  4. Scoop cookie dough onto a sheet pan lined with Silpat or parchment paper in a 3×4 grid of 1-2 Tablespoon per cookie.
  5. Press cookie dough balls to ½” thickness. 
  6. Bake at 375° F for 8 minutes, check on them and rotate the pan.
  7. Bake for approximately 8 minutes longer or until they reach the color/consistency shown in the video. 
  8. Remove pan from oven and immediately transfer cookies to a cooling rack.
  9. Allow to cool for 3-5 minutes before consuming.
  10. Enjoy!! But remember, these are not to be staples of your diet. They are treats. Take my advice and eat no more than 1-2 per day at most.
  11. You can store these at room temp or in your fridge for up to one week, but there is no way they’ll last that long… Freeze for up to six months.

Zone Breakdown:


We have 2 large eggs, each giving us one protein block.


We have ½ cup honey. We know that ½ tablespoon equals one block. We have 8 tablespoons in ½ cup, therefore 16 blocks from the honey.

Additionally we are adding 1½ cups Chocolate Chunks.  A cup of chocolate chips on average weighs 168g, and therefore 1½ of a cup weighs 252g. We know that ½ oz, or 14g equals one block, so that gives us 18 blocks from the chocolate chips for a total of 34 blocks.


We start with 3 cups Almond Flour. We know that 6g of Almond flour equals one block.  One cup weighs about 112g, so therefore we are using 336g, giving us 56 blocks.

Additionally we have ½ cup Coconut Oil. We know that 1/3 of teaspoon equals one block so therefore we have 24 blocks for a total of 80 Fat blocks.

Balancing Act:

These cookies are 2-1 fats to carb count (we won’t count the protein as the count is so low).  They are a delicious snack but high in fat, so limit yourself, if you can, on how many you eat.
