  • What is Paleo?

    Paleo refers to the diet of our Paleolithic ancestors. In short, the diet is based on eating meat and vegetables, nuts and seeds, some fruit, little starch and no sugar. It can also refer to the Paleo lifestyle, which focuses on being active, training anaerobically, minimizing stress and resting well. This site’s main focus is on the food quality of the diet prescription described above.
  • What is this site all about? is a site dedicated to teaching the Culinary Fitness concept. The site’s main feature is the instructional cooking videos and recipes that are available on a subscription basis. It is influenced by the CrossFit philosophy and focuses on Nutrition as the foundation of fitness.
  • Do I have to pay to watch the videos?

    Yes. There is a lot of free content on the site, including some videos and recipes, but the “premium content” is available as a subscriber to Each lesson will include a free trailer and brief description of what is taught. You will need to log-in to view the full video and download the recipe.
  • There are all kinds of free Paleo websites out there, why would I pay to subscribe to your site?

    I have received many requests to write a cook book or start a website. My intention was to write a cook book with accompanying DVD, but I wanted something more current and organic. There are endless Paleo blogs/recipe websites and I wanted to offer something different. My goal is to publish a constant stream of cooking lessons based on the Paleo and Zone diets. For less than a dollar a week, I invite you into my kitchen and teach as if we were cooking together one-on-one.
  • Why would I want to learn from you?

    Since age 14, I have worked in a professional kitchen. I have studied the Culinary Arts extensively and cooked in 27 different food service establishments. Some of the highlights of my career have been working as Chef at the Alaska’s Tordrillo Mountain Lodge and as Private Chef to Lance Armstrong. I have been involved in CrossFit since 2008, when my career started to focus on Nutrition and Fitness. I am passionate about food and people and I want to teach you how to cook, instead of just follow a recipe.
  • What is your Nutritional Philosophy?

    My philosophy is to practice “Results Based Nutrition” and in order to do that, you need to have a game plan of how to fine tune your diet. Although this site is called Paleo Nick, it is as much Zone as it it Paleo. I’d argue that the Zone diet is the Paleo diet, when focusing on the favorable foods that The Zone prescribes. The Paleo aspect of my philosophy addresses the quality of what we are eating. I have experimented extensively with both diets and feel confident giving advice on human nourishment, especially when it comes to fueling fitness.
  • What is your Cooking Philosophy?

    Keep it fresh, constantly varied, and fun to eat. I want to teach people to actually cook and not just follow recipes; to shed their “Recipe Reliance”. This is part of the Culinary Fitness philosophy and prepares one to enter any situation where food is involved and feel confident that they can make some tasty grub. I like grass-fed, free range, wild, local and organic. I know it is more expensive, but as they say, “you pay now or you pay later.” After all, it’s more fun to pay now; I consider it an investment in my health.
  • What is the Paleo Cooking Challenge?

    The PCC is another piece to the Culinary Fitness Puzzle. If you don’t have a chance to test your fitness, how will you know where you stand? The monthly challenge will test knife skills, preparation speed, and culinary creativity, among other things. I will publish a guideline video within the first week of each month and participants will have until the end of that month to submit their entries. The videos will be posted on the PCC page and will then be voted on. There will always be a prize worth fighting for, so check out this month’s challenge and get busy…
  • What is the goal of

    To drive home the fact that Nutrition Is the Foundation of Fitness, to teach people how to cook, and to have fun doing it! I want to create a video/recipe resource for the CrossFit Community. My goal is to have 1000 videos with accompanying recipes that will act as a Paleo/Zone Culinary School” and give people a confidence in the kitchen that they never dreamed of.
