Today's throwback is to Paleo Nick's "windswept" (the result of that crazy convection oven) banana chocolate chip muffins. All we can say is this... It's pretty amazing what you can make with bananas, almond butter, almond flour and good ol' chocolate chips (or carob chips if that's your jam).
In under thirty minutes, you can have a tasty treat that will impress even your non-Paleo friends and family - if you feel like sharing these babies, and we don't blame you if you don't.
Nick's chocolate chip banana Paleo muffins are up for interpretation, so feel free to swap out the chocolate for blueberries or cranberries or whatever strikes your fancy. If you can limit yourself to one a day, or a few a week, your muffins will keep in the fridge for up to five days and in the freezer for up to six months.
