TBT - Scallop Ceviche With Oysters
Paleo Nick goes way back to his Alaskan Culinary Roots for a refresh on his Scallop Ceviche With Oysters. This one's from the spring of 2013 and it will have you fitting nicely in your summer jeans!
As the season's change and you look to dial in your beach bod, this lean protein offering is top notch. While Nick serves it over oysters, you could keep it simple with some lettuce boats or even simpler with a spoon! He shares why he sees scallops, avocado and mango all in the same textural family and encourages you to cook for those you love (even if the cooking's done with lime juice and not fire).
